Essential Functions / Process Responsibilities
Majority of the time spent using independent judgment in making employment-related and business decisions, or effectively recommend such decisions including but not limited to product and department related strategies, hiring, promoting, disciplining, suspending, discharging, rewarding or otherwise engage in resolving Partner-related matters
Key responsibilities:
- Quality of products – Made to CM standard
- Production schedule and quantities made to meet forecast
- Production Waste control
- Training and coaching of the Production partners on product quality and process
- Ingredients purchasing to meet production schedule
- Production area organization including cooler and freezer
- Sanitation
- Support Bakery Manager in their daily duties as needed
Technical Skills:
- 5+ years in Bakery production – Preferably a graduate from a Baking/Pastry school
- Has managed teams of at least 10 bakers
- Experience in planning production and sanitation standards
- Experience training new bakers to achieve proficiency
- Able to troubleshoot recipe/product issues
- Pastry: Knowledge in all basics components manufacturing (Buttercream/Icings, cooked Creams and curds, Pate a choux, Sponge and Cheesecakes. Has worked with rack ovens, kettle, 80 to 140qt Mixers
- Bakery/Bread: Knowledge European style baking using complex preferment (Levain, Sponge/Poolish). Has worked with Deck ovens, rack ovens, bread divider, bread divider rounder
- Tortilla Production experience a plus
